cheesecake tweaks

Made cheesecake for the first time. Came out okay but want a lighter texture. Found Cook's Illustrated Light and Airy C. The main trick seems to be whipping the egg whites. (And perhaps the water bath they use affects the texture...?)

There's a problem though in that their recipe calls for 1.5 cups sugar! I used 1/3 cup sugar and that was plenty sweet enough. Given that I already know the flavor would be just fine for us, what impact will reducing the sugar that much have on the texture? (I'm not a big baker, so haven't played around with variations much to learn their impacts.)
