I live in Houston and while not a hotbed we have some nice pizza here and there are 3 or 4 places on my rotation. I was at one the other day and while I was eating 4 pies were delivered around me. Everybody immediately reached for the 'cheese' and poured it over perfectly good mozzarella. This stuff sits out all day everyday and has to be the Sysco equivalent of the green can. I don't get it. Do some of the better pizza cities have this and does anyone use it?
