cheese substitutes in my eggplant recipe

I make a hacked-up eggplant parmesan that tastes really good. It's really more a mix between eggplant parm and ratatouille. A friend of mine was wondering how I might make it without the parmesan cheese on top, but without using fake cheeses (she's allergic to dairy, and hates non-dairy "cheeses"). I know you can make "parmesan" using almonds, nutritional yeast, and salt. But I don't know how it tastes or anything else, as I've never tried it.

Does anyone have any ideas for a parmesan substitute that's not a storebought fake cheese? One thought I had was to mix some polenta in with the veggies. Any thoughts? Thanks for your suggestions.
