I want to make stuffed dates as an appetizer. One of my cookbooks suggests stuffing medjool dates with a sliver of a good-quality parmesan.
I am a relative novice to the gourmet cheese world, but I am finding that I like a variety of cheeses. I was wondering if there is something other than parmesan that would send these little gems to new heights of deliciousness---something that will be sublime with the sweetness of medjools. Manchego, perhaps? Or a good asiago? I was also thinking of adding a whole toasted almond, but that might be a bit over-the-top.
