cheese to post with mole dish

I made a mole last night that is a bit on the sweet side (it called for lots of chili powder which left a slight bitterness I countered with a bit of honey and more chocolate than the recipe called for).

It will be paired with shrimp - some skewered and grilled but some I'd like to bake in the mole with some cheese on top. I've done this before with a hard mexican cheese but it wasn't the right choice (didn't really melt well and got chewy) and the recipe I'm adapting (really adapting ... called for olives and chicken) calls for montery jack (which doesn't sound right with the sweeter touch).

Ideas?!
