Would like to make cheese - i.s.o. rennet and non-pasteurized milk

Hey friends! We were at Clockwork on Glenwood South (Raleigh, NC) earlier this week (major cool bar & restaurant… definitely ask for Fernando for the bartender and not this chick bartender with a big chip on her shoulder against gin for some reason) and had this lovely cheese they made in-house. Then drizzled with a healthy dose of honey and pistachios (*licks lips remembering!*)

So of course now I'm obsessed with trying to replicate it. V says to start we need non-pasteurized milk and rennet before proceeding any further.

Ideas on where to secure these two items in and around Raleigh?
