Cheese fondue w/o alcohol?

Another post just got me thinking about a question I've been meaning to ask for a while. I really love the classic Swiss fondue recipe (garlic, white wine, Gruyere and Emmental cheeses, kirsch), and none of the alternate takes on cheese fondue that I've tried make me nearly as happy. But, there are several abstainers from alcohol in my social / eating group, and I'm quite certain based on the way it tastes that a good portion of the alcohol in the classic recipe does not "cook off" in the fondue-making process. So does anyone have a suggested substitute for the wine and kirsch that will still make for a tasty fondue?
