Yes, yes, I know this is the conventional wisdom. And while I have no possibility of even entertaining the idea of a cheese sauce or a broiled slab of cheese atop most fish, I'm wondering if some Hounds will *ever* challenge or violate the "rule". I mean, grated cheese in and on tuna melts is hardly heresy, nor is cream cheese a forbidden stranger to lox and rillets.
Tonight I'm baking pink salmon pieces in a garlic-mustard aoili, and what got me thinking about this topic is: It didn't bother me one bit to scatter some parm shreds in with the breadcrumbs as a topping.
