Cheese Curd (You know?)

Just to show that I'm not totally obsessed with popular foods of Shanghai:

I just returned from a visit to my Native Place in Upstate New York (hint: Gary Danko took my brother-in-law's oldest daughter to the Senior Prom there). A popular food in the area is cheese curd, a fresh, rubbery, salty bi-product of the making of Cheddar cheese. Cheese curd is used as 1) a snack food (great to nibble on while watching a football game) or 2) an ingredient in "poutine" (another whole topic!)
