I bought entirely too much cheese for a New Year's Eve cheese platter and also received some as part of fruit/cheese basket. Have much more than the two of us can---- or should --- consume before it goes bad.

Can soft cheeses, like camembert, be frozen once opened? Other cheeses - various blues, gloucester?
