I have to cater a business party that will be between 40-50 (for now) people. The organizer wants sandwiches and side dish. And she wants them cheap. I think the price was around 6 Euro per person. I am doing this as a favor in my house. I am not a professional caterer, and doing it with no help whatsoever (and probably won't charge for my time). I was racking my brain as to what would be alright to serve and came up with a pressed sandwich as it can be left overnight in the fridge (I have 3 small kids and no time to dilly dally). I am in Romania and meats and cheeses from Italy are extremely expensive and Romanians are scared of anything different.. Cheddar is prohibitive and provolone is hard to find. We have wonderful salami from Hungary but they might be too hard for a sandwich. I would have to cut them myself, no problem. These sandwiches have to be easy to eat and I am worried our salamis would be tough. There is only an hour break for lunch and it is stand up. I would like to make something "gourmet" and delicious without breaking the bank.
For a side dish I was thinking something simple like potato chips since it would be cheap and they would like them.
Originally I wanted to to an open sandwich bar with bbq pork and roast chicken along with an huge array of condiments. They said no one here would know how to assemble their own sandwiches and would be scared.
Thanks so much. I am in a pickle.
