Right now my quetion is about buying bulk Callebaut. I found one online store (gourmail.com) that has pretty decent prices for the 11 lb. blocks ($40 for the bittersweet), but I'm going through it at such an alarming rate that I was wondering if anyone knew of a place where I could shave a few bucks off that. Additionally, if anyone has another chocolate of choice and a good source for purchasing it, I'd love the recommendation. I'd love to get my hands on some Valrhona blocks, but they seem to be prohibitively expensive for practice. For those who can offer suggestions, I need the chocolate to be suitable for baking and couverture.
