Chavela Preparada, Taqueria Jalisco in Salinas

Last week I had a very nice chavela preparada for my mid-afternoon "coffee break". Unlike other spots in town, this taqueria doesn't have any posters or menu card promoting chavela. Luckily I saw another customer with an icy mug and asked about it.

This is my favorite of the three versions I've tried. Made witha can of Tecate, the blend was far more winey with distinct red wine notes and a bit less citrusy. Crisp and juicy stalk of fresh celery. The perfectly poached prawns laced around the rim were halved, then draped on the rim and the tails curled over forward. Dabbed with a touch of Tapatio hot sauce, they were downright artsy.

As much as I loved the chavela here, I need to add that the chips and salsa were below average. The salsa was like regular ol' canned stewed tomatoes with no kick at all, plus had a weird thickened texture from gums or some additives.
