Looking for charcuterie-based restaurants all over the world

Hi all,

for a new project I'm trying to get an idea of what's out there when it comes to restaurants or eateries that specialize in serving sausages, cured meats, pate's etc. Serving them 'as is' or serving them prepared, in more elaborate dishes.
I'm googling myself silly but it would be very helpful to get some pointers from Chowhounders who know (and love) places like this.
I'm not going to travel the world and visit them all (wish I could), basically I just want to check out their websites, get a feel for the different approaches. So they could be located anywhere.
My project isn't so much about setting up a restaurant like this, but about how to present / promote a place like this to the public (mostly through the website).
