OK, so nobody else has volunteered, so I'll give it a shot. Forgive me, unlike LW, I am doing this from memory.
So Doug enters LCK and sees MexiKosher guy and crazy Adam are his competition. Katsuji is sad to see Doug there--he was rooting for his friend to win. The eliminated chefs roll in a big tray of livers. Since Doug lost on undercooked foie gras, the challenge is liver worst. There is beef liver, pork liver and goat liver. (Damn, who knew livers were so big?) Adam looks around and notes none of the chefs are excited by this ingredient.
Doug picks pork liver, which he works with often. Adam picks beef liver, channeling his childhood nightmares of his grandmother's liver and onions. Katsuji goes for the goat liver. Doug remarks he would never go with goat liver--it's too gamey and it has sinews that make it difficult to clean.
Doug makes pork liver with semi-carmelized onions and a chimichurri. Tom asks if the onions are undercooked deliberately. Doug says he wanted a texture.
Adam takes a big hunk o beef liver to cook. Did I mention they only had 20 minutes? Not surprisingly, Adam's liver doesn't cook through and he has to slice it and put it back on the heat. He serves it with onions and peppers.
Who knows what MexiKosher made. Goat liver with lots of ingredients. He apparently chose goat because it's a Kosher animal? But liver is not Kosher, so he's never cooked it before? Color me confused.
Tom says all are delicious. All the garnishes were great. So it comes down to the liver. And . . . Katsuji is eliminated. He didn't properly clean the liver. It was tough.
