I have what I think it supposed to be a lovely 1/2 bottle of champagne - Veuve Clicquot Ponsardin 1995.

My question is this: if I open it and don't finish it, is it OK to save it in the fridge overnight, or will it be destroyed?

If it's not good for keeping, would it be a waste to use this champagne for a dressing for a salad?
