I am serving a dish out of Mario Batali's new Babbo Cookbook this Saturday and have no idea what wine would go with it. It's his spicy lamb tartare served with baguette slices with a mint pesto. The lamb is raw (naturally) and has a jalapeno sauce and capers mixed in with it. What would go with this?
And while we're at it, what would you serve with his grilled pork tenderloin with a porcini-spice rub?
