Challenge: PIE (crust) approximation/substitute

I have a fairly specific, narrow request, and am hopeful our collective wisdom and experience will wrinkle out some possibilities.

The core of it is I'm looking for a commercially available cookie or pre-made dough to substitute for the texture and "flavor" (NOT the function) of really, really good pie crust.

The context/backstory: We used to like pie. Now that we rarely eat sugar, bought pie is too sweet. Plus, I don't do baked goods. We do not keep flour and such in the house. (No problems eating a small amount every now and again.)

So, about once a quarter, we want some "NEW PIE"(tm). I prefer to make the cooked fruit but I want to buy some - I'm thinking a small cookie of some sort - that I can serve a couple along side to create an "old pie"-like experience.

I don't care whether it's made from flour or those (slightly ridiculous) gluten-substitution concoctions, but I do care if it's loaded with sugar or a slew of sleazy additives. But I can sort through that. Remember, really, really good pie crust: flaky and with just enough moistness for yummmmminess.
