I'm using this recipe: http://cooking.nytimes.com/recipes/66...
It calls for an hour rise, then punch down before another 30 min. The bread is then shaped and let to rise for another hour in the refrigerator.
This third rise, since it's in the fridge, can it be longer than an hour? Like overnight?
I would normally just try it for an experiment but I need the bread in the morning :)
