That's the Sun-Times headline to an article in today's paper (page 12, can't find it on the internet edition) about why the owner of the Hubbard Street Grill had to close: "We're a dinosaur. It's all going to the chains." He goes on to explain the various attempts he made at modifying the menu, all to no avail. I personally never set foot in the place, but the fact that he was swallowed up by the likes of Smith and Wollensky, Spago, etc. is sad. The article cites sales growths of three chain restaurants over the past 5 years: Maggiano's, 36.4%, Capital Grille, 32%, and Cheesecake Factory 29%. YIKES!
