Chai - why pour back and forth between two pans???

Just returned from India and noticed something that I had completely forgotten since my last trip there - street chai vendors would use a second pan or a large cup to pour the boiling chai from the pot over the flame back and forth.

While this is extremely picturesque, this process must serve some other purpose. Anyone know what that purpose would be? I'd like to replicate my "chai, garam chai" experience as best I can at home and I am wondering if I should be making a chai waterfall for any reason.
