A few months ago we stumbled upon the "live chaat" set-up outside Yum's Bistro's neighbor, the catering banquet hall, Bezawada, in Fremont. Available on weekends (Friday to Sunday per the sign, but Thursday to Sunday on the website) in the evening, the protocol is that you go inside to pay and then show your receipt to order at the outdoor Z Chaat stand.

We tried the pani puri, which are made one at a time while we stand circling the table. That way there's no chance they'll lose their crunch before the customer devours them. The spiced water was nuanced and clean-tasting. But the chutneys seemed less complex than at Chatpatta Corner that remains my gold standard for pani puri.
