E x NE is getting jazzed! It seems I just did a CH post about their incredible new Ramen Wednesdays, and today I see that Philip is going to start a 4 part Explore China series.
We've talked a bit on this board about Lamb,and Cumin and Potatoes in Western China ,and our local restnts that sell some of those dishes
(Golden Gate in Belmont, Gene's- yes?) and West is the first of the series dinners.
<On Thursday March 6th, we will begin a four part dinner series. We are calling it EXNE Explores, where we will focus on a region of China and draw inspiration from the cuisine unique to that area. The first installment will explore the cuisine of western china. With many ethnic minorities representing western China, the cuisine is not what many think of as "typical" Chinese food, including noodles and breads unique to the area. Lamb is a commonly eaten protein, often spiced with cumin and chili powder. We will explore these flavors while giving it a twist of our own. Confit of lamb belly, skewered and grilled, dusted with a blend of cumin, chili and Chinese peppercorn, served with lamb fat roasted sweet potato.
