Hi everyone - I am attempting to make ceviche for a cinco de mayo happy hour this evening. Everything I read said you should make it the day of, and Rick Bayless Recipe said it needed to "cook" for 4 hours or so. I used 3 pounds of shrimp and scallops this morning, and put it in this morning around 10:30 am. I just checked it and they don't look anywhere near finished. I cut them in half and added more lemon and lime juice thinking that might help. I need them to be done at 5:30, so I have 3 more hours - are they going to be done? Is there anything I can do? My husband said he thought I should poach them quickly, but I don't know what that would do to their consistency??? Help! Should I just relax and cross my fingers?
