ceviche help, please!!

I tried to make ceviche yesterday, using shrimp I did not pre cook. After 12 hours in a combination of lime juice, lemon juice, hot sauce and a bit of olive oil; the shrimp are still the grey color I associate with being "uncooked". Are they supposed to turn pink when it's ready? Please advise -- I don't want to let it sit too long if in fact it is "cooked".
