A Wall Street Journal article this morning reminded me that I haven't seen any discussion on this board about the Berkshire pork that Central Market has begun to carry. I've only been able to sample it a few times, but those few times have left quite an impression. So full of flavor from all that marbled fat. Definitely the best pork I've ever had.
The first time I bought just 2 thick pork chops, rubbed a little oil, salt and pepper on the outside and baked them in the oven to about medium-rare (never overcook pork). I figured this was the best way to taste the pork, and it was. So far, I've only sampled the pork chops. They also offer tenderloin--which I can't imagine being as good as it's relatively fat free-- and ribs. I bet if you ask you can get a shoulder, too.
Has anybody else had this pork yet? I'm not sure if they are at all the Central Markets or just the "north" Austin one.
