Celery comes in these huge bunches, but I only need a stalk or two for most recipes. I don't find celery particularly interesting (e.g., celery sticks, or the celery pieces you get in takeout Chinese food), and I don't use it much in cooking, except in a mirepoix, and subsequently in a cream-of-leftover-vegetables soup. Although celery seems to last a long time in the fridge, I find myself throwing it out often.
Do you have any suggestions as to how to use up the rest of the celery in an interesting and yummy way? Any suggestions would be really appreciated - thank you!
