Cdn. visitor seeking best dim sum in Chinatown and more

I am in the throes of planning my next trip to your amazing city. I have visited from Edmonton, Canada once or twice each year since the early 80's and am so jealous of all of you who call the city home.
Later this summer, I am visiting with an old university buddy who insists that we have dim sum while touring Chinatown. I am unable to convince her that we should have dim sum elsewhere - seems she read an article saying that this is a must. Could someone please tell me where we should try?
Also, I have never been to Cafe Jacqueline, probably since I often vacation alone these days. Now that I have will a friend along, I would be able to go for souffles there. My friend says that she has never had a souffle and since she lives in Victoria, a 2 day drive from Edmonton, I can't just pop over and whip one up for her. Your opinion please - should we go?
Also, I need a recommendation for Sunday brunch. I was considering Zuni, but would would appreciate any suggestions that you may have. We will be leaving for home later in the afternoon, and I would like to plan something especially good. We will be staying near Union Square, but will travel outside that area to find the best brunch around.
