There are scads of recipes for cauliflower soup but I'm not finding anything for adding it as just one ingredient to a soup/stew. We're leaving town and I'm trying to use up a lot of produce. This includes about half a cauliflower that's getting a tad old anyway. The stew is going to have garlic, onion, tomatoes, carrots, jalapenos, potatoes and duck. I'll likely add some haricot verts and asparagus tips at the end. Is there any reason not to add cauliflower? I figure it wouldn't take much cooking or it will fall apart. I won't faint if I wind up throwing it away. Any thoughts on this? TIA.
