caul fat uses

I bought some caul fat because I had vague memories of watching eps of Iron Chef where chefs would wrap meats to be roasted in it. The caul fat (which looks like netting) would dissolve into the meat, helping it retain its shape and imparting flavor. Problem is, I'm having trouble finding any recipes that use it. Any of you hounds have experience with it?
