My grandfather drove cattle from Ft Stockton TX up to New Mexico somewhere and his stories about food were very educational. Being from the Missouri Ozarks biscuits and beans were standard fare for him and on the trail they had biscuits three times per day. They had biscuits and pork fat and coffee for morning chow and then they stuck biscuits in their pocket to munch on during the day and then had biscuits and beans for supper every sundown.
Along the way they had cattle die off which were butchered and from that they got a variety of special treats like steaks and stew and whatever else one can brew up from a beef side. But there was one beef dish he had trouble with: Chili con Carne. He and others form bland-food-country including, if you believe McMurtrey, England and Ireland were not at all fond of it. So they learned to get a scoop of beans and a scoop of chili on their tin and mix it together to dilute the chili peeper spice.
The point of this post is to bring an awareness to the chili cook off aficionados who look down their noses at people who like beans "with" their chili. Notice I did not say that beans belong in the pot of chilli but there can be no denying that mixing chili "with" beans has a Texas heritage much older than any chili cook off.
