Catfish Salad with Vietnamese Fish Sauce

My friend gave me a great simple recipe for tangy accompaniment to pan-fried fish, and I tried it for the first time today with some fresh greens. Wow. If you like Vietnamese flavors but have been a little wary of experimenting at home, this is a great way to ease yourself into it. It's not complicated at all, and the skills required are not too far afield of what most home cooks should already know.

one lime
1 Tbs. sugar
2-3 cloves fresh garlic
2-3 Tbs. Vietnamese fish sauce
1 tsp. chopped jalepeno pepper or a pinch of cayenne pepper (optional)

You combine the lime zest, lime juice, and other ingredients to make sauce, then pour it over your favorite pan-fried fish. That's all!
