I'm having some galfriends over for a casual dinner at the end of the month. One of the ladies doesn't eat seafood; another is a vegan. I thought about pasta primavera or veggie lasagne, but I think I need an eggless pasta for the vegan- where do I get that? I could just make a nice salad and the vegan can have that and whatever veggies I serve with the meal. Laurie Colwin wrote a wonderful essay on this sort of dilemma, mourning the good old days where guests came and dined on whatever you put before them. Oh well. Any ideas for a simple tasty menu that fits these restrictions would be greatly appreciated. TIA!
