So i love to braise things and i've been intrigued by the hype around cast iron for a while, so i bought a cast iron dutch oven, but i have been pretty disappointed so far. Basically, i found out the hard way that acidic ingredients are not good in cast iron. So there goes tomatoes, vinegar, and wine in a braise. I started making cast iron bread, which is pretty awesome, but i'm wondering what else i can do with this thing? I'm having A LOT of trouble figuring out what i can put in this thing if i can't put any acid in it!
In addition, i'm wondering if the cast iron dutch oven is superior to a standard enamel dutch oven when it comes to bread? Like, does the cast iron get a lot hotter than an enamel dutch oven, which leads to better bread?
I'm considering getting rid of what i have and purchasing a standard enamel dutch oven, but is there something i'm missing here? Why would someone choose a cast iron over an enamel dutch oven??
