Where have all the carts gone?

Ok, so we took some friends from the suburbs to Phoenix for Dim Sum - I think we got there around noon. They had a blast. I, however, was a little disappointed - let me explain. When we got there, we were overwhelmed with choices, but as time went on the carts became fewer and far between. We had to sort of hunt down some of my faves. The stuff we ate was great, but it seemed like the selection was meager (the same ladies with the same selection over and over again). Is there a time when Dim ends (that is a time after which one should not arrive after), or was this a one time experience?
