Jim, your carrot recipe is simply a small variation on a standard recipe for cooking carrots: carrots are cooked in a mixture of oil, butter, and water until the water evaporates. Of course, the amounts of water and fat depend on the number and size of the carrot pieces. See, for example, Julia v.1, p.477, published in 1966.
