Does anyone have any experience with making a carrot juice reduction? Is there a certain kind of carrot juice that works better than others?
Try this from the World Carrot Museum (yes there is one!)
Carrot Reduction INGREDIENTS:
• 1 cup carrot juice
• 1 pinch curry powder
• 1 ounce (2 tablespoons) rice wine vinegar
• Salt and sugar to taste
1. Reduce the carrot juice by half. Whisk vigorously if the juice separates, then add the remaining ingredients.
2. Whisk again to incorporate.
fresh carrot juice works best, if you have a juicer. if not, buy one of the better organic juices that are 100%. this makes a terrific sauce for lamb, btw.
