Does anyone have any experience with making a carrot juice reduction? Is there a certain kind of carrot juice that works better than others?

    Try this from the World Carrot Museum (yes there is one!)

    Carrot Reduction INGREDIENTS:
    • 1 cup carrot juice
    • 1 pinch curry powder
    • 1 ounce (2 tablespoons) rice wine vinegar
    • Salt and sugar to taste
    1. Reduce the carrot juice by half. Whisk vigorously if the juice separates, then add the remaining ingredients.
    2. Whisk again to incorporate.

          I have a juice extractor, and have been thinking about doing a carrot or sweet potato reduction. Once you had the juice, how did you reduce? Really low heat? Any fear of burning? I've been unable to find guidelines in any of my cookbooks.

            Yup, I just put the juice into a 3 quart pan over low heat with the seasonings I was using for the dish - some fresh thyme and something else, I think - and let it cook down slowly. It was supposed to take about 25 minutes but I think it was more like 45 to reduce a cup and a half.
