Faced with a near to empty refridgerator and a flu induced craving for comfort food this evening....i came up with a very filling and satisfying (albeit a bit salty) dish which was vegetarian, and lower carb (but not low fat)... for anyone not trying to watch their carbs right now (i'm trying to wean myself off relying on them), i think noodles or even potatoes also might be nice in this one.
Into the frying pan went some olive oil, minced garlic and two sliced onions. I then tossed in some sliced fresh mushrooms as well as some rosemary (i did not have fresh) and fresh ground pepper, and let these cook for a while. In the meantime i defrosted two soyburgers in the micro, and mashed them. These also went into the pan, along with some smoked paprika, red wine and onion soup mix (yes, yes i know). once everything cooked up, i tossed in some leftover cream, just a couple of tablespoons, and some cubed mozzarella.( The brand i used has no animal rennet in it ). Gooey and cheesey, and hit the spot for comfort food.
