Thanks Cape Cod Guy for the recipe. Made the Carnegie Deli Cheesecake yesterday and served it for brunch this a.m. It is by far the best cheesecake I have ever tasted let alone made myself. I have one question though. The cookie crust at the very top got a little darker (not burnt) than I would have liked it. I did as the recipe stated by putting the crust witnin about 1/2 from the top so it was exposed a little above the filling. I followed the directions re the oven temp exactly as given. I wonder if my springform pan being the dark teflon type had anything to do with this. I have a Wolf range and the oven temp is right on. Would lowering the temp slightly prevent this from happening next time? I would have liked it just a little lighter. Thanks for the recipe and thanks for any suggestions you might have.
