Carmelized Onion Tart

Carmelized Onion Tart:
1. Carmelize the onions - thinly slice 1 or 2 large onions (I prefer red but anything sweet will work). Melt a small amount of butter in a saute pan over M heat. Add the onions and cook very very slowly - after they soften, turn the heat down to M-L. This will take at least 45 min but is a very important step to proper carmelization. You can add s & p & even a bit of sugar about halfway through the process.
2. Tart - you can make your own dough, but I use pre-made phyllo either in sheets or the tiny little cups. If using cups (which makes a cute presentation for apps), spoon a small amount of the carmelized onions into each cup. Top with a tiny square (very thin works best) of Gruyere or similar cheese.

They are finished as is, but I like to pop them into the microwave or oven or toaster oven for a quick warm through and to melt the cheese a bit.
