For our honeymoon, my husband and I stayed at Divi Little Bay Resort on St. Martin. Every day they grilled the most delicious chicken on the beach. I still kick myself for not asking for the marinade.
The chicken was almost like a teriyaki but only barely sweet with a great deep umami flavor with a very slight spicy heat. I saw the chefs cart and think its possible the marinade had ketchup in it-maybe Does anyone know the recipe?
