Tell me about Caribbean cuisine, please.

So my local Kroger just expanded their "International Food" section to include Caribbean spices, canned foods and interesting things like coconut cream and canned callaloo and peas in coconut milk.

I've been to the Caribbean several times and loved the food, I love spicy, and I like seafood (although it's hard to find fresh in the upper Midwest.)

So. Any good recipes, blogs, websites for inspiration? I think I want to play with some of these ingredients but not sure where to start. A lot of my home cooking is Indian or Middle-Eastern based so I am handy with spices. I'd like to experiment with this cuisine but just don't know much about it.
