Bought a 12" carbon steel wok there around Christmas. $30 or so IIRC. Seasoned it from day 1 and have been using it about once or twice a week (I have standard electric range). What I noticed is foods never really sear nor brown in it. In fact often when I put foods in, instead of browning and searing, things tend to just simmer. This with the burner on MAX. This is rather embarrassing for me to ask, since I'm no stranger to wokking and I'm Chinese (!). So I don't think I'm doing anything wrong, but I am also reluctant to find fault with the wok itself.
