Carb Lover's Gingerbread Cake and Rustic Tart--Yum!

Thank you for your terrific recipes! I made the Tart exactly as you said, well, tried to...I think i just slightly overhandled the dough. however, except for right in the middle of the thicker sections, it was flakey and tasty! I roasted thinly sliced tomatoes, sprinkled w/salt, pepper, fresh rosemary and put those down on the crust first, covered w/soft goat cheese and baked. simplicity itself but super delish!

The Gingerbread Cake I altered in my usual low-fat loon way. Instead of 1c oil, i used 1/2c. applesauce, 1/2c oil. I wanted to make it less sweet, so used 1/2c blackstrap(didn't have light molasses) and 1/2c rice syrup but only about 3/4c sugar, i think i'll go down to 1/2c sugar next time as I like the cake spicy and less sweet.
I totally spaced the fresh ginger! But it was still plenty gingery, also, using some ideas from the other poster's recipe, I added 1tsp dry mustard, 1tsp cin instead of 1.5, also 1.5tsp cardamom, plus some freshly ground pepper.

The cake took about 50min to bake, probably b/c with the applesauce it was denser. Still, it was super moist, I really didn't think it had any low-fat feeling to it. Really!
