Sincere THANKS to all the wonderful CH recommendations for my low-carb weekend houseguests. Everyone who gave suggestions deserves a halo. The houseguests were very appreciative and we all ate well. Having several pounds of cooked shrimp was a lifesaver - a quick lunch and easy nibble. The Fricos were a smash! I never would have thought of them and they disappeared to both dieters and non-dieters alike. Easy to make more as a cracker substitute. Ditto for the great salami & pepperoni. Lots of cheesy omelettes, with and without ham/sausage/bacon. A huge prime rib one night (will post a question soon), steaks & rack of lamb for the dieters and accompanying vegetables, salads for anyone who chose to partake. Vegetable kabobs were a hit, the zucchini, red bell peppers, mushrooms were all carb-friendly. Creamed spinach & asparagus disappeared as well. Thank you for your help to make this a wonderful, food-friendly time for people who love one another but live on opposite sides of the country and don't see each other often enough.
