I found a FABULOUS recipe for caramel apples at
http://www.epicurious.com/bonappetit/.... I made a double batch and all of my friends went nuts for it. There was enough caramel left over that I poured it into an 8" square pan, chilled it for awhile and then cut it into caramel candies. I had enough melted chocolate left to hand-dip some of the caramels, too. WOW.
This totally beats melting Brach's or Kraft caramels. The flavor was deep and rich and just to die for. And I loved the details in the recipe, including photos. Truly foolproof!
