I just had the most fabulous cannoli cake this weekend from a bakery. I would love to try and make one at home, and the recipes I've seen online use either a traditional fried pastry (like a real cannoli) layered with filling, or a cake batter recipe. I don't think the cakey option will be as good, and I don't feel like making fried pastry. My question is: what if I just used frozen puff pastry sheets and layered the filling on that? Has anyone ever tried this?
