Anyone else played around with this? For Christmas I made a batch of peanut brittle using Earth Balance sticks, 1:1 substitution in place of butter. It worked pretty well but the brittle seems a little oily on the surface. Then for New Year's we made popcorn balls, caramel corn variation, again using Earth Balance sticks 1:1 in place of butter. And again, pretty good flavor but the caramel was a little oily.
I'm wondering if I should reduce the amount of Earth Balance a bit/ I'm assuming that there's less water/more oil in Earth Balance than there is in butter, and that's what's making the candies come out oily. Thoughts? Any other successes using EB in candy making?
