I'm shocked that I can't find a picture online of my favorite candy -- See's Apricot Bonbons. (Not even at See's site.) So here's my own photo--
See's has more than one kind of apricot candy, but I'm only interested in these--I'd like to make them at home.
They are filled with a pastel orange-colored creamy filling which contains little bits of moist dried apricot. The outsides are made of a yellow confection. Strong apricot flavor inside, mild outside. I'm pretty sure both the centers and coating are called "fondant", though they're obviously quite different things! Can anyone shed more light? There must be more specific names for both components?!
I've just put in an order for a candy cookbook recommended here-- "Candymaking" by Ruth Kendrick, and an old Time-Life candy cookbook with "techniques and recipes".
