Candied pumpkin Buckeyes

I was trying to create a mid-western (Ohio) holiday special without nuts and came up with this brainstorm (for those who don't know, Buckeyes treats are named after horsechestnuts: peanut butter balls coated in chocolate):

Take a melon baller to a pie pumpkin, blanch in lightly salted water, candy pumpkin balls in simple syrup with ginger and cloves. After several days of candying, dry, then coat with any chocolate coating ( I used a nice concoction of valrhona, butter, sugar, and cream).


PS- Leftover syrup and pumpkin can be pureed and shaken over ice with vodka for pumpkin shooters
